Fresh Herb Tomato Soup
2 T Olive Oil
2 Med. Onion- thinly sliced
2 Lbs. fresh tomatoes-peeled and chopped, (use whole canned tomatoes if fresh is not available).
1- 6 oz. can of tomato paste
2 T snipped fresh basil or 1t dried
4 t fresh snipped thyme or 1 t dried
1 small bay leaf
3 C homemade chicken broth or 3 C low fat low sodium canned chicken broth
1 t salt (if you use canned broth 1/2 t may be enough. Depending on personal taste.
1/2 t pepper
1/2 large clove of garlic-(optional)
In large pot heat oil add onion and garlic cooking until tender but not brown.
Stir in remaining ingredients mashing tomatoes slightly.
Bring to a boil , reduce heat, cover and simmer about 40 minutes. If you want a creamy texture, press soup through a food mill or use a food processor blending well. Reheat and serve.
Note: Soup can be preserved using the hot water bath method following instructions for canning whole tomatoes.
